I have to stay on the gluten free diet and desserts are limited in my gluten free world. Any suggestions?

My favorite is Peanut butter ice cream!
Ingredients
225g/8 oz Crunchy Peanut Butter
175g/6 oz Granulated Sugar
240ml/8 fl. oz Milk
240ml/8 fl. oz Double Cream
2 tsp Vanilla Extract
Instructions
Combine peanut butter and sugar in a large bowl. Blend until smooth. Add the milk. Mix at a low speed until the mixture is smooth and the sugar has dissolved. Stir in the cream and vanilla extract. Pour mixture into an ice cream maker. Churn until frozen, about 20 minutes. Scoop out of ice cream maker and place in a storage container. Store in freezer for 8 or more hours before serving.
