When calling to make reservations or find out information ask them if they can provide you with your dietary needs BEFORE you make reservations. Fifty/forty years ago resorts didn’t really know what diabetics ate, now the diet is common every where. More and more individuals request a food preference. My son is a vegan, and years ago his hotel/resort food was rather boring and bland, well, that has changed for the better.
Fax, or email a list of what is acceptable to you because because the list of all gluten-free foods can be quite extensive. You can also try to get a deal with the resort if your food is not included in the price and you can purchase the food at a market and they can prepare it for you.
Good luck and healthy eating!!!

I found most resorts were very accommodating regarding special diet requirements provided you speak to the head chef. Email them in advance.
