Can Iuse a hand held mixer or does it have to be a heavy duty mixer. Is there a way to mix my Hodgenson mill gluten free bread mix by hand?

I am not familiar with gluten free batter. If the batter is thick and heavy like many bread recipes, a mixer with a weak motor might break. Some hand mixers do have fairly heavy duty motors.

It will probably break your mixer. Gluten free dough is very dense, so you’ll either need a bread machine or a counter top mixer.
I imagine it’s possible to mix it by hand, but I have no experience with regard to that method. It would probably be something of a chore, however once mixed gluten free bread dough does not require kneading because the reason bread is kneaded is to activate the the gluten. So of course that would be pointless with GF dough.
